This all started with a day off of classes. My mom and I went out to breakfast, as we always do on a day off, and drove to a place we love but don’t visit often. We had a long day ahead of us and of course breakfast was the perfect way to start. However, the snow was a little out of control and we almost ditched the plan for the day and thank goodness we didn’t! We ordered iced coffee (as usual), lemon pancakes to share, and coconut chia bowls. They were incredible and it was a first time try for both my mom and I. I really wanted to remake this at home as soon as I could and of course searched through countless recipes. I tried three different recipes and all went horribly wrong. This recipe was a final try and if it went as badly as the others, I was officially done trying. So after many recipes I finally tweaked this one, that came out so perfect, to fit how I wanted it and it is incredible! This is great for breakfast or dinner too, especially because breakfast for dinner is always a yes. Added this recipe has so many health benefits with anti-inflammatory chia seeds and natural sugars too. So here is my absolute favorite chia pudding recipe that is easy, creamy, healthy, and perfection in a bowl.

Vanilla Coconut Chia Pudding
1/4 cup chia seeds
1 teaspoon vanilla extract
3/4 cup coconut milk (or 1 cup)
1/4 cup vanilla soy creamer (optional)
1 cup yogurt (I use silk vegan yogurt)
Combine all ingredients and mix together until well combined. I do this in a big bowl then distribute into mini jars for small portions. Close them and give them a shake. Put in the fridge for 30 min. This is the perfect time to do small things around the house like laundry, meal prep for the next day, or anything else that just needs to get done but won’t take long. Then take out and give one last quick shake. Let them sit overnight and they will be perfect by the time you eat them! Top with additional toppings and enjoy!
