Snack Mix

I was watching a bunch of “What I eat in a day” videos and was super inspired to make this mix. I love eating healthy and of course need snacks around that help me make good choices and not bad ones. This mix is delicious and so satisfying! I hope you enjoy!

Ingredients:

You can change these up according to what you like of course but here’s what I used:

handful of roasted unsalted cashews
handful of lightly salted almonds
Handful of pepitas (pumpkin seeds)
Handful of unsalted sunflower seeds
A few tablespoons of chia seeds
A handful of unsweetened coconut shavings
Handful of dried tart cherries
A bit of honey

Directions:
Preheat the oven to 350F and line a baking sheet with parchment paper (I cut mine to fit perfectly). Combine the cashews, almonds, pepitas, and sunflower seeds and pour over a bit of honey. I then went in and mixed it by hand just to make sure it was all coated. I put this in the oven for 5 minutes then immediately after I took it out , I stirred and mixed it around with a spatula. I let this cool completely before adding in my coconut, chia seeds, and drier fruit. Put it in a bag or container to store. Enjoy whenever or pro tip: place in a bowl with almond milk (or whichever you prefer), put some fresh berries on top and enjoy! image.jpeg
