Lebanese Salad

This salad is a remake of a traditional fattoush salad which has tomatoes, cucumbers, and some type of bread. This one is based off a salad at my local Mediterranean restaurant and it’s delicious!

Salad Ingredients:

  • half a cucumber
  • half a tomato
  • romaine lettuce
  • green and purple Bibb lettuce
  • 1/4 cup red quinoa
  • handful walnuts
  • handful of dried cranberries
  • handful of parsley

Lemon Dressing:

  • 1/3 cup olive oil
  • juice of 1 and a 1/2 lemons
  • teaspoon of salt
  • teaspoon of sumac
  • touch of honey



Cook the quinoa according to package directions. While it is cooking slice up the cucumber and tomato into a fine dice. Lay it over the two lettuces. Coarsely chop up the walnuts and the parsley. Toss these in along with the dried cranberries. Add the cooked quinoa when it is finished cooking and absorbed all the liquid. Add the dressing along with extra sumac and black pepper. Shake or stir to combine and enjoy!
