Fall Apple Crisp

I am in love with autumn. It is the best time of year with pumpkins, fall decor, apple picking, and of course fall baking! I have been trying to come up with a recipe that enraptures my love for fall but is still healthy enough to eat as a breakfast… so here we are!

Ingredients:

Apples/Filling:

6 apples, peeled and cored (I used melrose)

5 teaspoons lemon juice

1/4 cup brown sugar

3/4 teaspoon cinnamon

1/4 teaspoon sea salt

2 tablespoons cornstarch

 

Crumble Topping:

1/2 cup whole wheat flour

3/4 cup oats

1/3 cup melted coconut oil

1/4 teaspoon sea salt

dash of cinnamon and pumpkin pie spice

 

Directions:

Preheat the oven to 350. Then, slice up the apples and place them in a large bowl. Add the rest of the filling ingredients and stir so the apples are coated. Place the apples into a baking dish.

In a small bowl, combine all of the ingredients for the topping , except the coconut oil. After you stir all the dry ingredients, add the coconut oil and stir to combine. Pour evenly over the apples and add a sprinkle of sugar if desired since the topping has none on its own. Bake for one hour, take out, let cool, and enjoy!
