Christmas is my favorite time of year. I love Christmas trees, lights, the food, family, and finally some rest! So here is my meals for Christmas Day!
For breakfast I went with something light, a banana and strawberries with some hazelnut butter. Then onto dinner…
First I made cabbage and noodles:
I cooked vegan egg noodles according to the directions while softening the cabbage in a large pan with vegan butter. Once it was wilted and slightly soft, I added in the noodles and let it cook a little longer.
I then made my cranberry sauce and green beans that I made for Thanksgiving, the recipe is on that post and here.
Then for dessert I made the most wonderful gingerbread cake! I love gingerbread and a vegan cake that is dusted with snow like powdered sugar, is even better. So let’s get into it…
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons ginger
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1/2 cup molasses
- 1/2 cup unsweetened applesauce
- 1/2 cup water
Preheat the oven to 350F. Combine all of the dry ingredients into a small bowl. Then, combine all of the wet ingredients and stir until the brown sugar has dissolved. Pour wet into dry and stir until all of the flour is incorporated. Pour into a greased and floured 8 inch cake pan. Bake for 45-50 minutes or until a toothpick comes out clean.
Top with a dusting of powdered sugar and enjoy!
